Taste the different and unique flavors of our five single origin hot cocoas in this cozy collection!
Most hot cocoa on the market today is made by one of only a handful of large chocolate companies, then resold in bulk to smaller suppliers who put their own label on it. It's also alkalized with potassium carbonate, a process which strips out not only most of the beneficial flavanols, but also most of the flavor. You'll also usually find additives such as soy lecithin and, believe it or not, vanilla. The end result is a highly processed product which tastes more like additives than it does actual cocoa.
But we make this hot cocoa ourselves, using the same fine flavor, single origin beans we use to craft our award-winning chocolate bars. We're actually one of the only chocolate makers in the world to do this, since it's a very time consuming and difficult process. But, the results are worth it - each of these hot cocoas is bursting with it's own unique, single origin flavors.
To make this cocoa we first roast our single origin beans using the same roast profiles we use for our chocolate, and winnow them to remove the shells. They're then ground in our stone grinders, which develops the flavors and creates liquid cocoa (referred to as "cocoa liquor"). We press the liquor under very high pressure to separate out the cocoa butter, and the resulting block of 100% cacao is ground to create cacao powder. The final step is mixing in just the right amount of sugar - enough to enhance the flavors without making the hot cocoa too sweet.
This is truly a unique tasting experience for hot cocoa aficionados since single origin hot cocoa isn't very common. For best flavor we recommending mixing three tablespoons of hot cocoa with one cup of 2% or whole milk. Since our hot cocoa isn't alkalized you'll need to whisk it vigorously to ensure it's fully dissolved.
